Cornish Salted Baerii
The high mineral salt gives a flavour like no other. Being a younger growing species the flavour profile is akin to the ozone brininess of oysters.
–
Royal Beluski
Beluski has a savoury flavour profile and low salinity, very buttery and well textured grain. This makes it very versatile.
–
Imperial Oscietra
A true classic. These sturgeon are allowed to reach up to 14 years before caviar is produced, giving a depth and richness which is difficult to match.
