Thomas Gammella
Thomas Gammella’s path to becoming General Manager of The Braywood began in Stresa, Lake Maggiore, where he earned his High School Diploma in Enogastronomia ed Ospitalità Alberghiera – Culinary Arts & Hospitality at Erminio Maggia between 2011 and 2016. This prestigious hospitality school is renowned worldwide in the hospitality industry and was the first of its kind in Italy.
In 2016, Thomas made the bold decision to move to the UK, joining The Woodspeen as a waiter, despite speaking no English—a testament to his determination and passion for the hospitality industry.
Thomas brings his distinctive blend of Italian warmth and British hospitality refinement to The Braywood, ensuring every guest experiences the exceptional service standards that have defined his career. His journey from non-English-speaking waiter to General Manager embodies the dedication, professionalism, and genuine passion for hospitality that make The Braywood a distinguished dining destination.
Award-Winning Excellence in Service
Thomas’ dedication to exceptional hospitality has been recognised with prestigious accolades. He received the Royal Academy of Culinary Arts Annual Award of Excellence in 2019, followed by the Gold Service Scholarship in 2022—widely regarded as the pinnacle achievement for front-of-house professionals in the UK hospitality industry. This highly competitive scholarship, which attracts hundreds of applicants annually and selects only the most exceptional candidates, celebrates outstanding service excellence across the nation’s finest establishments.
Thomas’ remarkable achievements earned him an invitation to the Garden Party at Buckingham Palace, celebrating excellence in hospitality and service throughout the United Kingdom.
Progression Through WSH Restaurants
From his initial role as a waiter, Thomas worked his way up to Deputy Restaurant Manager at The Woodspeen, demonstrating natural leadership and an instinctive understanding of refined service.
In 2019, Thomas took on the role of Restaurant Manager at The Clockspire, a pivotal moment that saw him lead his first restaurant opening while The Woodspeen launched its first sister restaurant, a significant milestone in the story of WSH.
Thomas returned to The Woodspeen in 2022, first as Restaurant Director, then Assistant General Manager, before taking on his current role opening The Braywood as General Manager in November 2024.
