Meet Our Head Chef

Sam Brennan

Sam’s culinary journey began in childhood, surrounded by food-loving influences in his Wokingham family home. With French maternal grandparents who maintained a kitchen garden and a grandmother who cooked from dawn to dusk, plus paternal relatives including a baker, chef, and pub landlord, Sam’s passion for food was practically inevitable.

His professional path started as a kitchen porter at his uncle’s pub, where a Christmas snowstorm changed everything. Stranded for nearly a week, he helped with vegetable prep and salad-making – and fell in love with cooking. 

Sam’s culinary philosophy centres on creating simply delicious food without pretension. He finds true satisfaction in witnessing guests’ delight at first taste.

From College to London's Finest Kitchens

Despite his parents’ university aspirations, Sam chose culinary college, graduating as one of only five from his class of twenty still cooking professionally today.

Sam’s career flourished through prestigious kitchens, beginning as a waiter at The Hand & Flowers before his first kitchen role at The Aubergine. He honed his skills at Gordon Ramsay’s Petrus in London, then progressed through L’Ortolan in Reading from Demi Chef de Partie to Senior Chef de Partie.

A Long History With WSH Restaurants

In 2016, Sam joined The Woodspeen as Junior Sous Chef, advancing to Senior Sous Chef under Executive Chef Peter Eaton. 

After helping launch The Clockspire in 2019 and earning his first Head Chef position at The Bell at Ramsbury, Sam returned to WSH Restaurants, ultimately becoming Head Chef at The Woodspeen in 2023 before opening The Braywood in 2024.
